One Organic Lemon
There is little to no difference in green lemon's sweetness or acidity level because of the skin colour. The yellow skin on lemons is caused by temperature differentials between night and day temperature when they are growing, rather than how ripe they are. When there is a bigger temperature difference, this 'shocks' them into turning yellow. When the nights are warmer and the temperature difference is not so great (i.e., in the summer, during the early season) the skin colour does not change.

This thin-skinned, golden fruit requires thought and time to enjoy at its best. When ripe and firm the flesh of traditional varieties is very astringent and unpleasant. However, once fully ripened, when it softens to a satiny jelly, the flesh is wonderfully textured and both taste and scent are delightfully rich and aromatic without being overpowering.
