One Organic Lemon

There is little to no difference in green lemon's sweetness or acidity level because of the skin colour. The yellow skin on lemons is caused by temperature differentials between night and day temperature when they are growing, rather than how ripe they are. When there is a bigger temperature difference, this 'shocks' them into turning yellow. When the nights are warmer and the temperature difference is not so great (i.e., in the summer, during the early season) the skin colour does not change.
