Roasted Cabbage with Peanut Sauce

Introduction

When roasted the cabbage becomes a sweet caramelized, buttery roast with slightly charred, crispy edges. Add to this the peanut sauce and breadcrumbs and you have a really flavoursome dish. Easy to make. Serves 4

Ingredients

Roasted Cabbage

• 1 cabbage - tundra, pointed or any other

• Olive oil (about 2 tbsp)

• Large pinch of salt

• 2 tsp Miso paste (optional)

 

Peanut Sauce

• 1/2 cup smooth natural peanut butter

• 1/4 cup warm water

• 1/2 fresh lime juiced

• 2 tbsp soy sauce

• 1 tsp fresh ginger minced

• 2 cloves garlic minced

• 1/4 tsp smoked paprika

 

Garlic and chilli breadcrumbs

• 3 slices of bread

• 2 small garlic cloves finely chopped

• 1 small red chilli deseeded and finely chopped

 

Fresh coriander to serve (optional)

Method

Roasted Cabbage

1. Heat oven to 200C/390F/gas mark 6

2. Cut the cabbage into 8 wedges - Cut in half first, then quarters, then eighths.

3. Drizzle the oil and salt over the wedges and then gently massage in with your hands. Option here to mix 2 tsp of miso paste with the olive oil before rubbing into the cabbage for extra flavour.

4. Space out on a baking tray or two, and roast for about 20 to 30 minutes, turning half way through, until edges are crispy with some slight charring. Cabbage should be tender.

 

Peanut Sauce

1. While the cabbage is cooking mix all the peanut sauce ingredients together until well combined.

 

Garlic and chilli breadcrumbs

1. Heat 2 tbsp of olive oil in a pan at a medium temp.

2. Fry the garlic and chilli for 1 minute. Add the breadcrumbs, then fry for 5 mins until crisp. Remove from heat.

 

Serve

3. When the cabbage is tender place onto a plate. Drizzle over the peanut sauce. Sprinkle over the breadcrumbs. Add fresh copped coriander on top to serve. Serve warm.
