Tomato, Melon and Feta Salad
Introduction
This salad uses sweet seasonal tomatoes and melon with salty feta cheese to create a refreshing and flavoursome dish that's a perfect side to any summery meal.
Ingredients
- 2 tbsp olive oil
- 1 tbsp red wine vinegar
- 1/4 tsp chilli flakes or cayenne pepper
- 2 tbsp chopped mint
- 400 grams (about 4 medium) tomatoes - quartered or eighthed
- 400 grams melon - chopped into simerlar sized chunks. Here we have used watermelon and cantaloupe melon
- 200 grams pack feta cheese
Method
- Mix together the oil, vinegar, chilli flakes and mint to make the dressing. Season with salt and pepper.
- Put the watermelon and tomatoes into a bowl. Pour over the dressing and leave to stand for 10 minutes.
- crumble or chop feta into small chunks and stir through
- Serve immediately
