Tomato, Melon and Feta Salad

Introduction

This salad uses sweet seasonal tomatoes and melon with salty feta cheese to create a refreshing and flavoursome dish that's a perfect side to any summery meal. 

Ingredients
  • 2 tbsp olive oil
  • 1 tbsp red wine vinegar
  • 1/4 tsp chilli flakes or cayenne pepper
  • 2 tbsp chopped mint
  • 400 grams (about 4 medium) tomatoes - quartered or eighthed
  • 400 grams melon - chopped into simerlar sized chunks. Here we have used watermelon and cantaloupe melon
  • 200 grams pack feta cheese
Method
  1. Mix together the oil, vinegar, chilli flakes and mint to make the dressing. Season with salt and pepper.
  2. Put the watermelon and tomatoes into a bowl. Pour over the dressing and leave to stand for 10 minutes.
  3. crumble or chop feta into small chunks and stir through
  4. Serve immediately
