Kohlrabi Slaw
Crisp and refreshing, this is an easy 15 minute recipe that makes a great side dish salad. You can swap the pumpkin seeds for lightly roasted nuts of your liking. You can use red onion instead of shallots.

1/4 cup extra-virgin olive oil
1 tbsp apple cider vinegar
2 tsp honey
1 tsp whole grain mustard
1/2 tsp fine sea salt
1 large apple, cored and cut into matchsticks
1 medium kohlrabi, peeled and cut into matchsticks
1/4 cup thinly sliced shallot (or red onion)
1/4 cup pumpkin seeds
1/4 cup finely chopped parsley, more for garnish
Freshly ground black pepper
- In your serving bowl, whisk together the oil, vinegar, honey, mustard, and salt.
- Add the apple, kohlrabi, shallots, pumpkin seeds, and parsley, and toss to coat.
- Season to taste with salt and pepper, garnish with additional parsley, and serve.
