Kohlrabi Slaw

Introduction

Crisp and refreshing, this is an easy 15 minute recipe that makes a great side dish salad. You can swap the pumpkin seeds for lightly roasted nuts of your liking. You can use red onion instead of shallots.

Ingredients

1/4 cup extra-virgin olive oil 

1 tbsp apple cider vinegar

2 tsp honey

1 tsp whole grain mustard

1/2 tsp fine sea salt

1 large apple, cored and cut into matchsticks

1 medium kohlrabi, peeled and cut into matchsticks

1/4 cup thinly sliced shallot  (or red onion)

1/4 cup pumpkin seeds

1/4 cup finely chopped parsley, more for garnish

Freshly ground black pepper

Method
  1. In your serving bowl, whisk together the oil, vinegar, honey, mustard, and salt.
  2. Add the apple, kohlrabi, shallots, pumpkin seeds, and parsley, and toss to coat.
  3. Season to taste with salt and pepper, garnish with additional parsley, and serve.
