Garlic Roasted Radishes
Roasting radishes brings out their sweetness!
Tip: When storing, first remove the radish greens from the radishes and store separately. Both parts will do well in plastic bags or containers in the fridge - to help retain moisture. You can use these raw radish greens to make a peppery pesto or as an addition to salad. Radish greens also make a quick and easy side dish when sautéed with garlic and oil.
• 150 grams fresh radishes (1 bunch), stems removed*, ends trimmed, and halved
• 1/2 tbsp melted butter or coconut oil
• Sea salt to season
• Black pepper to season
• 1/4 tsp dried parsley or dried chives
• 1 garlic clove, finely minced
1. Preheat oven to 220 C. In a bowl, combine the radishes, butter (or oil), dried herbs, salt, and pepper; toss until the radishes are evenly coated. (Note: don’t add garlic yet!)
2. Spread radishes in single layer in a baking dish.
3. Bake for 20-25 minutes, tossing every 10 minutes. After the first 10 minutes of baking add the minced garlic and toss. Bake until radishes are golden brown and easily pierced with a fork.
4. Can be garnished with fresh herbs for that extra touch!
